Eco Brownie with inulin and topinambur powder.
Rich and bitter chocolate brownie is also suitable for diabetics, because cake is sweetened with inulin. Thanks to topinambur powder and inulin the cake is rich in fibers and is good for your stomach.
Inulin does not break down or absorb in the stomach, but it is moving in the intestine. Intestinal bacteria use it for the growth of bacteria that is associated with intestinal functions. During the studies, the fibers contained in the Jerusalem artichoke have been found to be prebiotic* and therefore useful in human gut microbiota.
* Prebiotics are food ingridients that create „good enviroment“ for „good“ bacteria and for „bad“ bacteria they create „unfavorable enviroment“.

The GI indicates the effect of carbohydrates on a person’s blood glucose (also called blood sugar) level. Foods with high GI will increase blood sugar level quickly.
Foods with carbohydrates that break down more slowly, releasing glucose more gradually into the bloodstream, tend to have a low GI (e.g topinambur powder). And this is the reason why feeling of fullness lasts longer.

Cooking instructions: whip 3 eggs. Melt the butter and add to the egg mixture. Add flourmix and whisk until smooth. Add nuts, if you like. Pour mixture into form and bake 170° for 20-22 minutes.
Vegan recipe: replace the eggs with banana. Crush the ripe banana with a fork and add the pleasant vegetable oil (e.g coconut oil for baking). If you do not want the coconut flavor to remain in the brownie, it is recommended to use unflavored coconut oil. Brownie’s density depends on the size and maturity of the banana, so make sure the dough is not too liquid. Then mix the dough until smooth, pour mixture into form and bake at 170° for 20-22 min.
